My Curried Sweet Potato and Apple Soup
This is a very delicious recipe with some kick. It has a lot of flavor and is very healthy. You can adjust the spices as you like.

Note: you can use fresh apples in the soup if you do not have applesauce and you do not have to put the chips on top. Some have made the soup alone without anything but coriander.
- Take the sweet potatoes and take one of them and cut it in half. Set it aside. With the other sweet potatoes, cut them into small pieces.
- Place the butter in a heavy bottom sauce pan and saute' the onions and garlic until they are soft. Ad in the spices and cook one minute more.
- Add the chicken broth, sweet potatoes and two cups of water to the pot. Bring the soup to boil and then reduce the flame. Add the applesauce to the soup and mix well.
- Cook the soup for 20 minutes or until the potatoes are soft. Let the soup cool slightly and then puree the entire soup. Season the soup with more salt and pepper as needed.
- With the remaining 1/2 sweet potato, cut it into very thin slices. You can peel if you like. Sprinkle the sliced potatoes with olive oil, salt and pepper.
- Bake them in a very hot 425 degree oven until crispy. Ladle the soup into bowls and garnish with some coriander and a few of the sweet potato chips.
