Carrot and Radish Salad with Feta Cheese - Salatat Jazar wa Fijil
Carrots are very popular in Jordan and this salad is simple to make. You can never go wrong with salad along side your meal. Salads are served along side the meal, not as an appetizer, so place small plates of salad around the table. Feta cheese should be soaked prior to use as it is extremely salty.
4 medium size carrots
4 large radishes
1 cup of feta cheese, chopped
1 small handful of parsley, chopped
Juice of 1/2 lemon
1 teaspoon salt
1/4 cup olive oil
2 cloves of garlic chopped
1 small handful of seedless black olives
Wash and grate the carrots and the radishes. Beat the garlic and salt together in a mortar and add in the lemon juice and oil.
Mix well. Pour this mixture over the salad and mix.
Place in a salad plate and top with the seasoning, feta cheese and olives.
